Brantford’s Canada Day

Brantford’s Canada Day Celebration has always been celebrated in a very special way that brings our community together to share our pride and our gratitude for living in the greatest country in the world. Canada Day will be celebrated differently this year due to the ongoing coronavirus pandemic, and in sensitivity to those in our community who are struggling with feelings of grief, sorrow and anger over recent discoveries of unmarked graves on the grounds of former residential school sites, and as a result, may feel uncomfortable celebrating Canada Day. This year, the City is offering a modified version of Canada Day themed programming for those who wish to both reflect on reconciliation to amend for a dark period in our country’s history, as well as acknowledge the unique attributes that make today’s Canada more inclusive.

As part of the City's modified Canada Day 2021 programming we are pleased to provide a virtual Canada Day broadcast featuring tributes, greetings from community leaders, Canadian singer and songwriter Suzie McNeil and The Chain Reaction as the headliner followed by talented local bands Maddy McKenzie, Three Legged Horse, Heckle the Band and more. Enjoy #Brantford. 🇨🇦

  • 3 oz. (approximately ½ a cup) salmon
  • 3 oz. (approximately ½ a cup) halibut
  • 12 mussels
  • 12 clams
  • 3 tbsps. butter
  • 3/4 cup onions, diced
  • 1/2 cup carrots, diced
  • 1/2 cup celery, diced
  • 3/4 cup yellow-fleshed potatoes, diced
  • 1 sprig of thyme

  • 3/4 cup heavy cream

  • 1/3 cup white wine (try to find an east coast wine)
  • 3 tsps. cornstarch (optional for a thicker base)

  1. To start the base, melt 1 tbsp. butter in a large pot over medium heat. Remember we will be adding all the seafood to this pot so make sure it is big enough!
  2. Add diced carrots, celery and onions. Cover until onions are translucent (this is called sweating) then add a sprig of thyme.
  3. Add cornstarch to the pan if you like a thicker consistency. Your choice.
  4. Deglaze the pan with white wine until liquid is reduced by half.
  5. Add the cream and milk; simmer over low heat for 10 minutes. (make sure heat is low)
  6. Add the diced potatoes and cook until almost tender enough to pierce with a fork.
  7. Melt 2 tbsp. butter in another pan, over medium heat and add all seafood.
  8. Once the clams and mussels have opened, transfer seafood into the chowder base.
  9. Add dill, and season to taste with salt and pepper. Garnish with fresh dill (optional).

Enjoy!
