Canadians Cook Together - Sunday, June 27 at 4:00 p.m.

Canadians Cook Together will give you a chance to create tastes from across Canada! On Sunday, June 27 at 4:00 p.m., purchase the Central Canada Main Dish ingredients, so you can virtually follow along as 13 year old Audrey MacKinnon, first-ever winner of Food Network’s Junior Chef Showdown, prepares her favourite Canadian themed dinner!

You can also recreate Audrey's favorite Canadian themed appetizer and dessert to go with your Central Canada Main Dish using the following recipes that she hand selected.

East Coast Seafood Chowder Appetizer
  • 3 oz. (approximately ½ a cup) lobster
  • 3 oz. (approximately ½ a cup) scallops
  • 3 oz. (approximately ½ a cup) salmon
  • 3 oz. (approximately ½ a cup) halibut
  • 12 mussels
  • 12 clams
  • 3 tbsps. butter
  • 3/4 cup onions, diced
  • 1/2 cup carrots, diced
  • 1/2 cup celery, diced
  • 3/4 cup yellow-fleshed potatoes, diced
  • 1 sprig of thyme
  • 5 springs of dill, chopped
  • 3/4 cup heavy cream
  • 2 cups milk
  • 1/3 cup white wine (try to find an east coast wine)
  • 3 tsps. cornstarch (optional for a thicker base)

  1. To start the base, melt 1 tbsp. butter in a large pot over medium heat. Remember we will be adding all the seafood to this pot so make sure it is big enough!
  2. Add diced carrots, celery and onions. Cover until onions are translucent (this is called sweating) then add a sprig of thyme.
  3. Add cornstarch to the pan if you like a thicker consistency. Your choice.
  4. Deglaze the pan with white wine until liquid is reduced by half.
  5. Add the cream and milk; simmer over low heat for 10 minutes. (make sure heat is low)
  6. Add the diced potatoes and cook until almost tender enough to pierce with a fork.
  7. Melt 2 tbsp. butter in another pan, over medium heat and add all seafood.
  8. Once the clams and mussels have opened, transfer seafood into the chowder base.
  9. Add dill, and season to taste with salt and pepper. Garnish with fresh dill (optional).

Enjoy!
